On the occasion of Slow Food Day, a special day established to celebrate and promote the values of the association, Slow Food Mugello Aps has decided to dedicate an event to the Mugello area’s most well-known dish: the “Potato Tortello.” And they’re doing it by organizing a very special cooking class.
On Saturday, May 17th, in Vicchio, there will be a unique opportunity to learn from a truly exceptional teacher: one of the cooks from Cavallico, the parish house in Borgo San Lorenzo where, for decades, many local mothers have volunteered in the kitchen, preparing meals for countless boys and girls.
The first — and still the most passionate and energetic — among them is Graziella Dallai in Tagliaferri, known to everyone simply as La Lella.
How many tortelli must she have prepared for all the kids who spent part of their summer holidays at Cavallico after school ended?
We’ll try to count them with her, while she reveals the techniques and tricks for preparing the classic and famous “Tortello,” a true symbol of our region — all in her signature style, full of humor, good cheer, and the unstoppable energy of a “steel grandma”!
La Lella will be joined by a skilled assistant in the kitchen: Cristian Borchi, a chef who felt the call of cooking from a young age, inspired by watching his grandmother knead dough and prepare traditional Tuscan recipes.
The class will take place at Cristian’s agriturismo in Pesciola, where participants will learn how to make tortelli from scratch.
This event is designed especially for our Slow Food members, but it is also open to non-members.
After the class, there will be lunch.
