AZIENDA AGRICOLA IL CASTELLARE

Il Castellare farm specializes in the production of two high-quality and niche products: Aglione and Saffron.

Aglione is a variety of garlic typical of the area, characterized by much larger size and a more delicate flavor compared to common garlic. It is cultivated with care and passion in our fields to ensure the highest quality and freshness of the product.
It has a taste similar to garlic, but much more delicate. It is called the "kiss garlic" because, once eaten, it does not have unpleasant effects on breath. Today, it is almost endangered, but there are some places that are preserving its production.
It is a typical and highly sought-after ingredient of the Tuscan tradition and beyond.
Aglione is available in the summer, after its harvest which takes place around June.

Saffron, on the other hand, is a precious spice highly appreciated for its intense aroma and golden color. Here too, we dedicate ourselves with commitment to cultivating our plantations to offer saffron of the highest quality, to be used in the kitchen to enrich dishes with its unique flavor.
We produce 100% pure saffron, which is dried at low temperatures for several hours, and the pistils are kept whole to enhance the flavor as much as possible.
Since saffron is a long-lasting spice, when correctly dried, it can be kept for several years. It is therefore possible to purchase it from the farm all year round.
