Many farms keep ancient artisanal traditions alive,often following organic practices. This cheese, with a soft or semi-hard texture, is made exclusively from whole sheep’s milk. It features a distinctive cylindrical shape, a golden rind, and a pale interior with a delicate, lightly spicy flavor. Each wheel tells the story of a deep connection between the product and the Tuscan land. Production follows time-honored methods, carefully preserved through generations. Aging takes place in controlled environments to enhance aromas and flavors. Pecorino  is perfect enjoyed on its own or grated.

In Mugello there is one very big producer of Toscano DOP (certified) pecorino cheese, but there are also numerous smaller producers that abide by all the rules of traditional pecorino making.
